We have a new wine for the complimentary wine in the cottages – Michael Hall Wines, 2017 Sang de Pigeon Shiraz. The philosophy behind the crafting of Michael Hall wines is ‘slow wine’. Rather than moulding the fruit to a style, Michael is interested in passively crafting the wine with as few material inputs as possible: hand picking, maceration, wild yeasts, lees contact, barrel maturation and no filtration. Allowing the season and site to show themselves.
Michael Hall wines cellar door is located at the heritage listed 1860’s barn in the Langmeil pioneer settlement of the Barossa Valley.
